Vegan Umami Broth
Because not everything is about meat broths, you can definitely substitute the broths for any noodle soup with this umami broth that is veggie based. By roasting the vegetables, we will be able to get that deep flavor that everyone is seeking after, and you will see you will not be missing the meat element.
This recipe is for broth only (and it will yield about 2 quarts), but you can always improve on it and also use it for other dishes as well. You can boil some carrots, celery sticks, and noodles in it for veggie noodle soup and add some other proteins to it to make it more substantial and filling. You can even just sip on it if you’re feeling sick with some scallions and fresh chilies!
Let your imagination wander, and you can make this broth work for you in all the ways you want!

How many servings? I’m guessing maybe 4? It sounds wonderful and super easy, which is very important to me. I live alone and am quite disabled, so I’m always grateful when I find something like this! Thank you! 😉
Is this for real?
Why is everything Chicken? I know its rare but some of us have an allergy to anything chicken!
So just omit the chicken or use some other meat. Why complain when the solution is so easy?
2 out of 5 recipes are not chicken.
Ain’t it the truth? Everything chicken. I am disappointed with lack of variety in the protein choices for these recipes.
