Ingredients (for three servings)
- 1 pound of ground chicken
- 6 thinly sliced scallions
- 2 garlic cloves, peeled and minced
- 1 1 inch piece of ginger, peeled and finely chopped
- 1 and a half cups of cooked, cool rice
- 1 small white onion, peeled and thinly sliced
- 1/4 cup of olive oil
- 1 teaspoon of Kosher salt
- ground pepper to taste
- 1 teaspoon of your choice of spice blend (curry powder, your own mix, hawaij, or baharat)
Instructions
Set your oven to 425 degrees Fahrenheit (if you wish to fry them in oil, you can also do that, but we recommend you cook them in the oven). Prepare all your aromatics—garlic, onion, scallions, and ginger—by peeling and cutting accordingly.
In a medium bowl, add your meat, cooked rice, olive oil, ginger, onion, garlic, and scallions, along with your salt, pepper, and spice mixture, mixing well but making sure you are not going to overwork the mixture. From the mixture, you should be able to roll about 12 meatballs (at about 1 and a half”) or more if you decide to make them smaller. Place your formed meatballs on a rimmed baking sheet with some space between them.
Place in the oven and cook until light brown and cooked through around 15 minutes. Check on them and make sure they are not undercooked or overcooked because they will dry out.
Serve with rice, make them a sauce and serve with mashed potatoes, place them on a bed of hummus, and serve with salad! Truly a versatile meal that you will not get bored of!
The possibilities are endless. You can keep them in an airtight container in the fridge for up to 3 days!
