White Beans
According to nutritionists, most legumes are high in potassium, including lentils, peanuts (unsalted!), and different types of beans. White beans are definitely one of the best sources of potassium, with 421 mg in 1/2 cup (130 grams). They also include good amounts of iron and calcium.
Plus, 1/2 cup of white beans boasts 4.9 grams of fiber, the equivalent of 18% of your daily requirement. But that’s not all: white beans are also a great source of plant-based protein.
The high antioxidant and fiber content of white beans can reduce the risk of diabetes and heart disease, improve colon health, and reduce inflammation. Furthermore, a study including nearly 250,000 participants discovered that a daily intake of 1,640 mg of potassium was associated with a 21% lower risk of stroke.

Not so fast! A few years ago, I was on a med that raised my potassium level and it very nearly killed me. Don’t go crazy with potassium without monitoring it! 🤔
