#5 Spanish Rice

Sure, there are those boxes of pre-made and pre-seasoned Spanish rice at a lot of grocery stores, but let’s be honest for a moment. They are not that tasty, and since it is a box mix, you don’t really know what is in it. If anything, you can make this delicious side dish at home in the time it takes to finish the box mix!

It may not be as “convenient” as using the box stuff, but believe us, it is worth it. And since the ingredients are super easy to find, you may already have everything you need for this side dish in your pantry!

Ingredients

  • 2 cups of instant rice, uncooked
  • 1 can diced tomatoes
  • 1 chopped medium onion
  • 1 minced garlic clove
  • 1/4 cup of butter, cubed
  • 1 cup of boiling water
  • 2 beef bullion cubes
  • 1 bay leaf
  • 1 tsp sugar
  • salt and pepper to taste

Instructions

Make sure you have your onions diced and your garlic minced before you start cooking, as well as all the other ingredients on hand for an easy and quick cooking experience.

In a saucepan, add the butter and let it melt over medium heat. Once it is all melted, add the rice and let it cook while stirring until it starts to turn a little brown. Add your onion, garlic, tomatoes, water, and bullion cubes, together with your bay leaf and sugar, then season with a little bit of salt and pepper. Stir thoroughly and bring to a boil.

Reduce the heat and leave it simmering after covering it with a lid until all the liquid has been absorbed and the rice has cooked, becoming tender. This should take about 10 to 15 minutes. Take the bay leaf out before serving!
