Ingredients
- 1 cup raw cashew nuts
- half a cup of water
- a third cup of cucumber
- 2 tablespoons of lemon juice
- 1 tablespoon of nutritional yeast
- half a teaspoon of onion powder
- half a teaspoon of garlic powder
- a quarter teaspoon of dried dill
- salt to taste
Instructions
Wash and peel your cucumber, then dice it roughly. In a power blender, add your cashew nuts, water, and lemon juice, alongside your cucumber, garlic, onion powder, dill, and nutritional yeast, then season with a good pinch of salt. Blend until the mixture turns creamy and smooth; taste at the end for salt. If needed, add more to your taste.
You can add cut chives or some more cucumber as a garnish before serving. It goes great as a dip or as a dressing for any salad!
You can also use this as a starting point for ranch recipes and then tweak it to your liking. Make it spicier; add other spices you may like; even other vegetables and avocado! The possibilities are endless with the adjustments you can make to this dressing!
