Crab Pasta Salad
This is a classic but delicious crabmeat and pasta combo. The lettuce-free salad uses spiral pasta, imitation crabmeat, and bottled dressing. They’re all budget-friendly choices. And you’ll even get texture and crunch from fresh cauliflower and broccoli.
This wonderfully simple and tasty recipe is always a big hit with families. And, fair warning: Don’t be disturbed by the bottle size for the salad dressing… The pasta will soak it all up!
Ingredients
-8 oz imitation crab meat
-12 oz uncooked tri-color spiral pasta
-1 head fresh broccoli, cut into florets
-1 head cauliflower, cut into small florets
-2 chopped tomatoes
-½ cup chopped fresh chives
-2 cups balsamic vinaigrette salad dressing
Directions
Step 1: Cook the tri-color spiral pasta in some boiling salted water until it becomes al dente.
Step 2: Drain and rinse.
Step 3: In a big bowl, combine the cauliflower, broccoli, tomatoes, chives, crabmeat and pasta. Pour an entire bottle of oil and vinegar salad dressing over and toss to coat your lettuce-free salad.
