Green Bean Salad With Mustard Vinaigrette

This recipe for lettuce-free salad uses fresh green beans and gets a simple yet elegant finishing touch due to a classic vinaigrette. Your food cooked from the grill will be honored to share a plate with this lettuce-free salad. You can even chop up some delicious almonds to sprinkle over tis dish!

Ingredients
-2 pounds of trimmed fresh green beans
-1 oil-packed jar of anchovies
-⅓ cup plus 2 Tbsp. of Olive oil, divided
-½ tsp of lemon zest plus 2 tbsp. fresh juice from a lemon), divided
-1 cup of fresh bread crumbs from 2 slices of bread
-2 grated cloves of garlic
-¾ tsp of kosher salt, divided, plus more for water
-½ teaspoon of Worcestershire sauce
-3 tbsp of chopped fresh dill
-Flaky sea salt for serving

Directions
Step 1: Boil a large pot of generously salted water. Add the beans and stir occasionally until they’re crisp-tender. This should take about 4 to 5 minutes. Drain and rinse the green beans under some cold water until they’re no longer warm. Shake off any excess water and place the beans on a large, towel-lined baking sheet to blot dry.
Step 2: Place the anchovies and 2 tablespoons of oil in a big skillet. Cook over medium, stirring and breaking up the anchovies with a wooden spoon, until they’re mainly dissolved and the oil is sizzling.
Step 3: Stir in the bread crumbs and ¼ teaspoon of kosher salt. Cook while stirring constantly until the bread crumbs are golden brown. Transfer the mixture into a smaller size bowl and stir in some lemon zest. Let it cool, tossing occasionally, for 10 minutes. Add in the dill and toss to combine.
Step 4: Whisk together the garlic, lemon juice, Worcestershire sauce, and remaining salt in a large bowl. Drizzle in the remaining ⅓ cup oil, whisking constantly. Add cooked beans and toss to coat.
Step 5: Transfer the beans onto a platter and spoon any remaining dressing in a bowl over the beans. Sprinkle with some flaky sea salt and breadcrumb mixture.
