#1 Cherry Tomato Salad
Yes, a simple cherry tomato salad can be a wonderful side dish and not just an added afterthought to a plate of meat and potatoes. It is refreshing, tasty, and full of flavors, not to mention healthy and an amazing dish all year round, but especially during the summer months. It also makes for a great side to bring to cookouts and BBQs, so give it a shot before you write it off. This simple side dish may just rock your world!
- 1-quart cherry tomatoes, halved
- 1/4 cup of canola oil (or any other oil that doesn’t have a strong flavor)
- 1/4 cup of fresh parsley. minced
- 1 to 2 tsp of fresh oregano, minced
- 1 to 2 tsp of fresh basil. minced
- 3 tbsp of white vinegar
- 1/2 tsp sugar
- 1/2 tsp salt
Instructions
Take half of your tomatoes and add them to a large bowl. Then, in a separate, smaller bowl, whisk together the oil, vinegar, sugar, and salt until well combined, then stir in your parsley. oregano and basil. Pour your dressing over your tomatoes and toss well until everything is coated.
Serve fresh, or refrigerate overnight in a covered container and serve the next day as a side dish for any meat main course!
