Besides fortified foods, mushrooms are probably the only non-animal source of vitamin D. It seems that mushrooms have the same abilities as humans when it comes to UV light, as they also synthesize vitamin D when they’re exposed.
Even so, it seems that mushrooms produce a different type of vitamin D, which is vitamin D2, while animals only produce vitamin D3. Studies proved that the vitamin D produced by mushrooms isn’t just as effective as the ones produced by animals.
