A lot of sources name mushrooms as one of the foods you should never reheat unless you want to risk getting a stomach ache. Both the European Food Information Council and The Independent have advised against eating them as leftovers, especially if they have been sitting outside at room temperature for a longer time.

This is due to the fact that the protein found in mushrooms, which is generally beneficial to your health, is easily altered by bacteria and enzymes the longer they are left out in the open. If you made a dish with a lot of mushrooms and don’t want to throw it away, make sure you reheat it at least 158 degrees Fahrenheit to kill any potential bacteria lurking in the dish.
