Ingredients:
- 4 large eggs, beaten;
- 2 cups chopped beet greens or any other type of veggies you have;
- 2 tablespoons extra-virgin olive oil;
- ¼ cup diced shallots;
- Kosher salt and freshly ground black pepper.
How to:
Step 1: Set your oven temperature to 375 degrees Fahrenheit;
Step 2: Heat your olive oil over medium heat in a nonstick ovenproof skillet. Stir in the beet greens or other veggies you like and simmer until everything is wilted. Continue by adding the shallots and cook for an additional 2 minutes;
Step 3: Season your veggies with salt and pepper, then add the beating eggs and remove the pan from the stove;
Step 3: Put the frittata in the oven and bake for approximately 10 minutes, or until the eggs are set. Depending on your oven, you might need to cook it for longer. Make sure to check your meal from time to time, so you don’t overcook it. Allow it to cool down for a couple of minutes, slice it and enjoy your delicious meal.
