Ingredients:
- 10 eggs, beaten;
- 10 oz bacon, chopped;
- 2 big handfuls of baby spinach;
- 1 tbsp butter;
- 1 1/2 cups mozzarella cheese, shredded (if you’re not a big fan of mozzarella, you can choose other types of melting cheese);
- 2 tbsp milk (you can also use another type of milk if you’re dairy free);
- 2 garlic cloves, minced;
- 1 tsp oil;
- 1/2 tsp salt and pepper;
- cooked and chopped spinach and bacon for garnish (optional).
How to:
Step 1: Preheat your oven to 350 F degrees;
Step 2: Combine the eggs, milk, salt, and pepper in a bowl;
Step 3: Grab a skillet or nonstick pan and heat your oil over medium heat. Then add your bacon and cook it until it has a golden color;
Step 4: When your bacon is done, add your garlic and cook it for half a minute;
Step 5: Toss in the spinach and cook until it has wilted a little;
Step 6: Take a third of the bacon spinach and place it in a bowl (for topping);
Step 7: Add your butter and mix everything well together;
Step 8: Spoon in around 2/3 of the beaten eggs. Add half of the cheese over, then incorporate the rest of the egg mix;
Step 9: Sprinkle some cheese over the bacon and spinach that were previously set aside for garnish;
Step 10: Cook your ingredients for roughly 3 minutes, until both sides are set, but not golden. That should take you approximately 3 minutes. You can use a knife to check;
Step 11: Bake for 8 minutes, or until the center is firm and the cheese is melted. Add the cooked bacon and spinach on top, wait a couple of minutes to cool down, then cut and serve. Enjoy your delicious frittata!
