Ingredients:
- 8 large eggs;
- 8 slices bacon chopped (if you don’t have bacon, you can substitute it for 1/2 cup diced ham);
- 2 green onions sliced;
- 1 ½ cups cooked potatoes or hash browns;
- 1 cup mixed vegetables, such as peppers and mushrooms, or any other type of veggies you like or have left;
- ½ cup of Cheddar cheese shredded;
- 1 tbsp fresh parsley or basil;
- ¼ cup light cream;
- ½ tsp dry mustard;
- ¼ tsp black pepper;
- 1 tbsp cooking oil;
- ¼ tsp seasoned salt.
How to:
Step 1: Preheat your oven to 400 Fahrenheit degrees;
Step 2: Add your cooking oil to a large skillet over medium heat and cook your veggies for roughly 3-4 minutes, or until they turn tender-crisp. Then add your hash browns or your chopped potatoes and cook for 5 to 6 minutes;
Step 3: Grab a medium bowl and combine your eggs, light cream, dry mustard, salt, and pepper. Whisk everything together until you have good consistency;
Step 4: Add your bacon and green onion, whisk well, then add the mixture over the skillet and sprinkle with shredded cheese and fresh parsley or basil;
Step 5: Grab your skillet and place it in the oven for 14-16 minutes or until the eggs are set. Broil for 1-2 minutes;
Step 6: Remove the skillet from the oven, let it cool for 5 minutes, then cut and serve. Enjoy!
