This is one of the biggest meat-marinating mistakes people make. When it takes you 15 minutes to make a marinade, and you let your meat chill, you want the result to be worthwhile and delicious.

But what if the flavor just isn’t right? To bring out a flavor that’s anything but boring, toast spices, bruise your herbs, and crush your garlic!

You marinate too long.

The best way to achieve marination magic is to soak your pork chops, chicken, loins, and steak for about 30 minutes, but never overnight. The stake of a lengthy bath in the marinade comes down to acid.

It will tenderize by breaking down the proteins in the meat. But since a marinade can only seep in so far, the acid can turn the outside layer mushy and mealy without softening the meat’s interior.
