Spinach
Everyone’s favorite leafy green that shrinks in size when immersed in water is such a versatile vegetable that you would not dream of eliminating it from your diet, especially if you are plant-based and getting your iron from it. However, you should be careful because spinach isn’t as unthreatening as it looks.
The leafy greens contain a compound known as oxalates that actually causes your body to bind calcium. If you eat too much spinach, it can lead to the compound forming kidney stones (as most of the kidney stones American adults experience are made from calcium oxalates). This doesn’t mean that you have to give up spinach, but it means you should be careful how much of it you consume so you don’t accidentally favor the creation of kidney stones.
Other notable veggies that also contain oxalates are okra, beet and collard greens, leeks, and Swiss chard!
However, you can still make sure that what you’re eating is healthy! These are some of our best and healthiest stews that you will love to eat this winter!

I’m certain you can buy these produce if they have the Organic Label! I’ve been eating most of these for over 10 years without any problem.
I’m so frustrated by conflicting information about which foods I should and shouldn’t eat. I’ve tried cutting out various ones with no impact on or improvement in my health.
